Pre-heat oven to 350ºF and grease two mini muffin tins with coconut oil. Set aside.
Add flour, grated carrots, and applesauce to a large mixing bowl. Set aside.
Separate egg yolks and whites. Stir yolks in with the remaining ingredients.
Place egg whites into a separate, small mixing bowl. With a hand beater, whip egg whites until stiff.
Carefully fold beaten egg whites into your batter.
Spoon batter into greased mini muffin tins.
Bake for 20 minutes.
Transfer to a wire rack to cool.
