Carrot Pupcakes: A Spring-Inspired Dog Treat Recipe

Ingredients
  

  • Coconut oil, to grease muffin tin
  • 1 cup oat flour
  • 1/2 cup peeled and grated carrot
  • 1/2 cup plain, unsweetened applesauce
  • 2 large eggs, yolks and whites separated 

Instructions
 

  • Pre-heat oven to 350ºF and grease two mini muffin tins with coconut oil. Set aside. 
  • Add flour, grated carrots, and applesauce to a large mixing bowl. Set aside.
  • Separate egg yolks and whites. Stir yolks in with the remaining ingredients.
  • Place egg whites into a separate, small mixing bowl. With a hand beater, whip egg whites until stiff. 
  • Carefully fold beaten egg whites into your batter.
  • Spoon batter into greased mini muffin tins. 
  • Bake for 20 minutes.
  • Transfer to a wire rack to cool.
