Method
- Preheat oven to 350ºF and line a baking sheet with parchement paper. Set aside.
- In a medium-size mixing bowl, whisk together oat flour and coconut flour.
- In a separate bowl, if using The Honest Kitchens's Instant Goat's Milk, mix together 1 tbsp of powder with 1/2 cup of warm water. Mix until the powder has fully disolved.
- To the bowl with goat's milk, add egg and coconut oil. Mix until thoroughly combined.
- Add liquid mixture to flours and, with a spoon, mix until thoroughly combined.
- With your hands, pinch a small amount of dough and roll it into a bite-size ball. Then flatten the ball into a cookie.
- Place cookies onto baking sheet and bake for 20 minutes.
- Flip cookies over and bake an additional 10 minutes.
- Transfer to a wire rack to cool.
Notes
For optimal freshness, store cookies in the refrigerator for 3/4 days, or in the freezer for up to 1 month.
